Kōtare is the Te Reo Māori name for the indigenous Sacred Kingfisher, an beautifully coloured bird from the family Halcyonidae, thus tying back to the winery's name Halcyon Days, get it? ;) Halcyon Days is the passion project of winemaker Amy Hopkinson-Styles and her husband Olly Styles. Through their work with various Hawke's Bay wineries, they purchase small special lots of organic grapes to make their particular style of no-holds-barred natural wine, with absolutely no sulfur additions or adjustments. This crunchy, chewy and pale-coloured orange wine combines whole-bunch fermented Sauvignon Blanc (and a few handfuls of Gewürztraminer) with a tiny amount of rosé from Pinot Noir. Hard to define within any specific wine style, but also hard to resist, it shows just how exciting natural wine in New Zealand can be!
